Bouchon Pais Salvaje is a delicate natural wine, but with a lot of personality.
When Pais Salvaje was vinified, the vine stalk was separated from the grape with an ancient wooden structure known as a "crested tree", typical of the Maule Valley, was used. In order to protect the aromas and flavours of the grapes, the wine was fermented with native yeasts and the must was stored in cement vats. To soften the tannins, carbonic maceration (50% only) is used. Last but not least, the wine was not filtered.
The result is a wine with floral aromas, with wild strawberries, rosehip and sour cherries. On the palate, it is juicy, fresh and light. An ideal wine to accompany Chilean dishes, such as empanadas, prietas and huaso rolls.
